Christine Nontell has fond memories of helping her mom bake cookies and decorate birthday cakes when she was a youngster. She loved the challenge of trying new recipes and learning different decorating techniques. Baking was in her blood, so she worked hard and trained herself by browsing through food magazines and countless online sources, as well as getting some hands on experience by taking a cake decorating course at Michaels… and of course, lots of trial and error in her own kitchen. For the last 4 years, Christine has been living her dream, satisfying the sweet tooth of all her clients.

Confections by Christine Confections by Christine provides wedding cakes, party cakes, cupcakes and other baked products to suit any event.Wedding cake prices start at $4/serving for a fondant covered cake finished with simple details. Cupcakes start at $2 each for a standard cupcake with your choice of buttercream or frosting finished with sprinkles. You can jazz up your cupcakes by including fillings or sugar paste flowers for an additional cost. FYI Winter brides, Christine offers discounted prices for weddings during the months of November through February! If you’re looking for wedding favors, Christine can make custom cookies or cake pops as well. Delivery charges vary depending on the location of your event, so contact Christine to determine the cost. Christine recommends booking 8-9 months ahead of time, especially for summer weddings. A Few Words With Christine…

Confections by Christine What do you have to offer for brides with lower budgets?
“I have many options to create a perfect wedding cake to suit the brides’ wedding style and her budget.  Things like a partially fake cake or a 2-tiered cake on a delicate pedestal stand or plateau are great options.  I also think a cute cake topper (Etsy is my favorite place for ideas), a crystal brooch or a few fresh flowers are great options for lower budgets. Many venues charge serving/cutting fees so some other options to avoid the extra cost would be to have cupcakes or cake pops. These items also make great wedding favours!”

What sets you apart from others in the same field?
“All of my products are made from scratch with fresh, high quality ingredients.  Everything comes together as close to the Confections by Christine event date as possible and are never frozen.  I have been most successful in taking each brides’ wedding style and my experience to design custom wedding cakes, individual to each couple.  All of my cakes are a direct representation of each couple’s unique style and vision, this is why I also name each cake after each bride.  Many brides come with an idea of what they want their cake to look like, and then I add in all the other details they have and present a few more options for them to consider.  I have always been able to take a designer cake and re-create something similar for each bride that suits her budget.”

Are you always looking to come out with new flavours? What’s your most interesting flavor so far, and which is your most favourite to eat?
“I am always developing new flavors and my inspiration comes from so many places – whether it is transforming my favorite dessert/drink into a cake flavor or a special flavor request/creation from the bride and groom.  My most interesting flavor so far is a Strawberry-Rose curd with a vanilla cake – it’s delish as a cake filling or stuffed in a cupcake.  It’s hard to pick just one flavor and it often changes as I develop new flavors, but right now I am loving my chocolate cupcakes with a new extra fluffy frosting with confetti sprinkles, it has to have the confetti sprinkles.”

“I use an extra dark cocoa and fresh brewed espresso in my chocolate cakes – don’t worry, you can’t actually taste coffee, but it adds depth to the chocolate flavor.  All of my cakes include unsalted butter (no margarine or shortening here!) or canola oil.  I use only Satin Ice fondant – because it has the best flavor and texture and smells just like buttercream!”

What do you enjoy most about your job?
“I love the creative aspect of taking a bride’s wedding style and ensuring her cake is just as much a part of her wedding as all the other details.   I love seeing and hearing about all details each bride has come up with – there are some very creative, resourceful brides out there!  This Confections by Christine also gives me a reason to keep looking at wedding sites and magazines for inspiration…2 years after my own wedding.”

If you had one piece of advice for a bride and groom, what would it be? 
“You will need to trust the experience of your vendors and have confidence in the product/service they provide.  Ensure you feel completely comfortable with the vendors you choose.  If something doesn’t feel right to you after your initial consultation you may want to keep looking or ask questions specifically addressing what concerns you.”
