Vancity Vendor – Kimberley’s Kitchen

If you went to the Tri-Cities Bakers Market, you probably met the show’s organizer Kimberley Mulla, the marshmallow specialist. She runs Kimberley’s Kitchen, and handcrafts gourmet marshmallows and other sweet confections for weddings and special occasions. She’s loved baking since she was a little girl but it was only a year ago that she started accepting clients.

Kimberley creates a variety of goodies like marshmallow pops, shortbread, scones, and brittle. Food quality is of utmost importance so all her creations contain organic, local, and fair trade ingredients like organic raspberry jam, organic almonds and fair trade cocoa. This makes Kimberley a very responsible food producer, only using the best for her clients.

DIY brides, Kimberley has a more cost-effective option for you and there are only 3 easy steps:

  1. Choose your confection
  2. Choose your packaging
  3. Choose your packaging details (ribbon, tags, etc)

Kimberley will then ship all the supplies, treats and details of assembly. Some examples of confections include: two heart-shaped marshmallows in the bride and groom’s favorite flavors with colors to match, a mini marshmallow cake on a stick, a box of assorted confections (Classic Peanut Brittle, marshmallow bites, and shortbread), or a mini fondue kit in take out boxes with skewers for dipping. This option is only available for larger orders, contact her to inquire if your event is eligible.

Kimberley recommends customers to order at least 1 month in advance. Unopened marshmallows remain fresh for 3 months, also make sure to keep them in room temperature, away from light for best results. Keep an eye out for promotions on her Facebook page and follow her on Twitter… but if you have a craving for something sweet during the week, she offers a special deal every Tuesday (Treat Tuesday!). She ships nationwide and in the US.

A Few Words With Kimberley…

What do you have to offer for brides with lower budgets?
“I custom design wedding favors that are in a couple’s favorite flavors, colors, and style of packaging that are beautiful and most of all really delicious. I believe that if you are going to give your guests a favor to say thank you and for them to remember your day, it should be something unique and made of quality ingredients. For the frugal bride, I can create something fabulous for only a few dollars per guest because my mark-up is very low.”

What sets you apart from others in the same field?
“The quality of my ingredients, the unique and stylish packaging, and the affordable price sets Kimberley’s Kitchen apart. Each wedding favor I create will be a one-of-a kind confection so the guests will be experiencing something very special.”

Do you cater to different dietary requests?
“Yes, marshmallows are naturally gluten-free making them a great sweet treat for those that can’t have gluten. They are also dairy and egg free (with some exceptions). I am currently working on a recipe for a gourmet vegan marshmallow that should be available this summer. As well, I use many organic ingredients in my confections.”

What made you decide to specialize in marshmallows?
“I love candy-making and I started to experiment with marshmallow flavors. I make a gourmet s’mores kit and a marshmallow slider- a flavored marshmallow sandwiched between sugar cookies and embellished with chocolate and toppings. It is so fun to create new and interesting combinations.”

Are you always looking to come out with new flavours? What’s your most interesting flavor so far, and which is your most favourite to eat?
“I have too many ideas for flavors and often have to edit my menu to keep operations a little simpler. Every season I have a new line-up of flavors as well as my Classics. But customers can order any of my flavors at any time. I also get special requests for flavors I hadn’t thought of- such as Root Beer. I made a Root Beer Float Marshmallow for a customer’s husband. The most interesting flavor has to be Guinness that I did for St. Patrick’s Day- inspired by the Guinness ice cream that is fabulous at Ed’s Real Scoop in Toronto. And my favorite to eat? Lemon Meringue Pie. It tastes like summer.”

What do you enjoy most about your job?
“The reaction when customers try my marshmallows. To create a treat that makes people smile and have a moment of happiness is incredibly rewarding.”

If you had one piece of advice for a bride and groom, what would it be?
“Make it your own- don’t try to please too many people. Your wedding should reflect you so make the most of it. Have fun and relax!”

    Just looking at the pictures of your yummies makes me realize how longs its been since i had some (ok – less than 4 weeks but still).

    Favs will always be lemon meringue, lavender, and chai.

    And its true – I still havent bought store made marshmallows since we started working together – nothing quite compares.
