Louis Gervais - Photo by Butter Studios I first visited Louis Gervais Fine Foods & Catering café a couple years ago when I interviewed them for this article. I met Louis Gervais that day and thoroughly enjoyed my lunch there… and I have been back for more amazing food since! Louis is a professionally trained, award winning chef with a culinary arts diploma from the Institute of Hotel & Tourism in Montreal. After a few years working in Montreal, he moved to the West Coast and worked at many of Vancouver’s finest restaurants and hotels, most notably the Sutton Place Hotel, where he was the Executive Chef for 8 years. As he climbed the corporate ladder, he realized he was spending less and less time in the kitchen and more importantly with his family. So he branched off and started his own catering company in 1998, a home business turned huge success: 16 years, a North Vancouver café, countless menus planned, dishes served, and many many happy clients.

Louis Gervais Fine Foods and Catering - photo by Jasalyn Thorne Photography Louis Gervais Fine Foods & Catering provides event catering services for weddings, corporate events and meetings, private parties, and special events.  Their café in North Vancouver resembles a modern French bistro with a large patio and an open concept kitchen. At night, it becomes an elegant venue where they host private cooking classes and events for up to 100 guests. They are a fully licensed catering company and have a full wine, beer and spirits list that they offer to couples that want to avoid the stress of getting a liquor license, purchasing, storing, chilling and transporting all beverages to the wedding reception. They are also able to take care of ordering and organizing and rental items you may need… not just table ware and cutlery, even bar equipment, table linens, tenting, or a full kitchen (if required)! All this will be handled during the consultation, clients will be given a quote and if all is good, they will ensure everything will be delivered, set up at your event, and tear it all down at the end of the night.

“Working in food and beverage and in catering it’s only natural to venture into the wedding industry.  I love creating amazing food and menus for clients and I love to feed people and catering a wedding is a great way to accomplish both these things.  Beautiful memories are made at weddings with family and friends and I love that they happen around my food, I’m always so grateful to be a part of that.”

What do you have to offer for brides with lower budgets?
“We just created some new and innovative menus with unique but affordable ingredients. A good chef can create a delicious menu at almost any price point. With this in mind, we developed seasonal sample menus with three different pricing structures for buffets and plated meals along with a full amuse bouche menu where each piece is priced between $2.00-$3.75.  And, all of our menus can be revised and adapted to meet a bride’s specific expectations for food, service and budget. Or, if she has a unique theme or favourite menu items she wants incorporated, I am happy to customize a menu to meet that vision. My sales team also works closely with brides to help them find the perfect service and menu option for their vision and budget. There are so many different combinations to consider and they are pros and finding just the right fit!”

What sets you apart from others in the same field?
“Being the owner and operator of Louis Gervais Fine Foods & Catering it’s really my face and reputation behind every meal.  I work alongside my team in the kitchen preparing for every event we book.  Everything is made fresh in house daily using the best quality produce and meats, and local organic ingredients whenever possible.  We even grow a lot our own herbs in the patio garden out front. Our bistro is an excellent venue for hosting menu tastings. I love meeting with couples over a glass of wine and some delicious food to talk with them about their vision for the wedding catering.  It also gives couples the opportunity to taste their menu so they can see how each item will be presented and garnished and provide feedback and request any changes. It’s the personal attention that you get here that sets us apart from the rest.”

Are you able to cater to different dietary needs?
“Absolutely, we don’t shy away from allergies, food preferences or different dietary needs.  We understand that today there are many of these needs that come up and that as a couple hosting family & friends you want to ensure everyone’s enjoys as much of the menu as possible. I really enjoy devising new recipes to meet different tastes and dietary restrictions.”

Do you accommodate ethnic food requests as well?
“Yes, most of the ethnic food requests that we get do turn into a customized menu.  Typically I or one of our event planners will meet with the couple and get an idea of the types of foods, herbs & spices they would like to see at their reception and then I will create a custom menu for them to review.  We would then follow this up with a menu tasting.”

Where do you source your ingredients? Do you try to stick with local products and why?
“All fish and seafood used in our catering menus is Ocean Wise approved and we use local organic products whenever possible. Being a small business, I’ve always felt strongly about using and supporting other local businesses. It helps to grow our economy and sustain our environment and, most importantly for a chef, the food just tastes better.”

What do you enjoy most about your job?
“The day-to-day interaction with my customers and clients. I love food and people and I love how serving them amazing food makes their day so much better.”

If you had one piece of advice for a bride and groom, what would it be?
“Hire vendors who understand your vision and can work within your budget!! That way you can relax and focus on more important things….like each other.”
